Beef Pho with Green Onions, Cilantro, and Basil

Leels Cooks, based in Apex, NC, shares this delicious recipe for Beef Pho - the secret lies in the bone broth, the more bones the better. Local green onions, cilantro, and basil are a must. Throw in sliced veggies from the garden for seasonal flavors.

Lenoir County Cooperative Extension. One for Baked Cheese & Chorizo - you can sub spicy Italian or other sausages. Pair this with Fig and Melon Salad for a late summer treat! 


Eggplant Lemongrass Curry with Spicy Bulk (ground) Sausage

With this meal we start with the delicious Eggplant Lemongrass Curry recipe from Transplanting Traditions Farm in Chapel Hill, NC. This is a great recipe to add a pound of cooked spicy ground sausage to the skillet.
