UFoods

What is UFoods?

UFoods (University Food Systems) was a USDA-funded research and outreach project of the Center for Environmental Farming Systems (CEFS, www.cefsnc.org) and the NC 10% Campaign to research and develop new market opportunities for small and mid-scale local farmers by building collaborative supply chain links from farms to university campuses. This project was funded 2016-2018.

The UFoods project partnered with six publicly-funded North Carolina universities that host the NC 10% Campaign's Local Food Ambassador Program.

HOW IT WORKS HANDBOOK

 

The How it Works Handbook: A Guide to University Food Systems & Local Food Programs,  is designed to showcase some of the local food initiatives of our UFoods partner schools, while also explaining the structure of the university dining system, steps for successful programs, and various pathways through which locally-grown food can reach campus community members. How It Works Handbook can be found here.

CAMPUS LOCAL FOOD GUIDES

UFoods worked with campus teams and NC Cooperative Extension to create Campus Local Food Guides for each of our six partner universities. The guides provide a detailed map of local food eateries and projects within walking distance of campus as well as a listing of nearby restaurants, grocers, farmers, community gardens, related community organizations, student club/program information, and student advisory board contacts. LOCAL/ALUMNI FARMER MAP

Look for local food providers on our UFoods Campus Communities Farmer Map, by location and alumni status. Farm contact & products are also included.

CATERING/AGRITOURISM LISTS

Start the local food conversation at your university by encouraging locally-grown/caught foods at catered events on campus or by taking a field trip to a nearby agritourism farm. These flyers list local farmers that can supply products for catered events or offer group tours. Post these flyers or share with University Catering Services, classes, and clubs.

FARM TO DORM COOKING VIDEOS

NC 10% Campaign and UFoods teamed up with GeoCore Films to produce a series of dorm cooking videos based on Local Food Spotlight seasonal recipes created by the UFoods project. The goal was to work with students to create engagement tools useful in campus-based local food programming and also to train students in video planning and production. Students were featured in the videos cooking healthy, local foods in a dorm room setting using minimal supplies. Geocore trained students in concept development, script creation, and visual/graphic/prop production. Access & Share the videos from here.
